1 1 ½ cups softened butter
2 cups of sugar
4 eggs (lightly beaten)
1 teaspoon vanilla extract
5 cups of all-purpose flour
2 teaspoons of baking powder
1 teaspoon salt
In a large mixing bowl cream butter and sugar (mixer- ok)
Then add eggs and vanilla and mix thoroughly
Then mix the dry ingredients together and blend into liquid mix
Cover and chill dough for at least one hour (or overnight).
Preheat oven to 400 degrees F. Roll dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes and place 1 inch apart on ungreased cookie sheet.
Bake at 400 degrees for 6 - 8 minutes or until done. Cool completely
NOTE: I've never gotten a cookie to roll out on a floured surface! My daughter-in-law Eleftheria has more success rolling her cookies out on the cookie sheet, then removing extra dough. Valerie and I used this recipe for pressed cookies.
