Ms Massey's Marshmallow Bar

 

                       Bar:

¾ cup of butter

 cup sugar

3 eggs'

1 teaspoon vanilla extract

1 1/3 cup all purpose flour

½ teaspoon baking powder

½ teaspoon salt

3 tablespoons baking cocoa (powder)

½ cup chopped nuts (not necessary)

4 cups miniature marshmallows

 

Topping:

1 1/3 cups chocolate chips

3 tablespoons of butter

1 cup peanut butter

2 cups rice crisp cereal

 

Directions:

In a bowl combine flour, baking powder, cocoa and salt and sit aside.

 

In mixing bowl, cream butter and sugar (beater) then gradually add in the flour mixture. 

 

If desired stir in the nuts.

 

Add eggs and vanilla--beat until fluffy.  Combine flour, baking powder, cocoa & salt and add to mixture.  Then, stir in nuts (if desired).

 

Spread in a greased jelly roll pan (10x15”) and bake at 350 degrees for 15 to 18 minutes.

 

Remove from oven and sprinkle marshmallows evenly over the cake (use a bit extra, if you like).  Return to over for 2 or 3 minutes or until marshmallows are melted. Then using knife dipped in water, spread marshmallows evenly over cake and let cool.

 

Topping: 

Combine chocolate chips, butter and peanut butter in small saucepan.  Cook over low heat, stirring constantly, until melted and  well blended.  Remove from heat and stir in rice crispy cereal.

 

Spread over top of marshmallows. Chill & cut in bars (makes 3 dozen).
