Ms. Massey's Chocolate Marshmallow Candy Roll

 

 

¼ lb of butter (1 stick)

2 squares unsweetened chocolate (2 ounces)

1½ cups powdered sugar (confectionery), sifted

1 egg

1 cup broken nuts

1 package of miniature marshmallows (6¼ ounces)

1 can (3½ ounces) of flaked coconut

 

Directions: 

 

Melt butter and chocolate over low heat, stirring constantly.  Cool slightly (or more).

 

While the mixture is cooling beat the egg in a separate bowl and set aside.

 

Stir in powdered sugar, egg and allow to cool (some more).

 

Fold in nuts and marshmallows.  Stir until both are coated with chocolate.

 

Lay 2 sheets of wax paper on table and sprinkle with coconut in center (length of log).

 

Coat hands with butter.  Divide the mixture into half (makes two rolls) and roll in coconut.

 

Wrap the roll in the wax paper and seal and cover with aluminum foil and seal again.

 

Put in freezer until hardened.  Slice while frozen.  Keep refrigerated after cutting (except when eating!).
