Oatmeal pudding cookies

 

1¼ cup all-purpose flour

1 cup butter (soften)

¾ cup firmly pack light brown sugar

¼ cup sugar

1 package (1 oz) of vanilla flavor instant pudding mix

2 eggs

3½ cups of quick cooking rolled oats

add 1 cup of raisins if desired

 

In a bowl combine flour and baking soda and set aside.

 

In a large bowl combine butter, brown sugar, sugar and pudding mix.  Beat until smooth and creamy. 

 

Beat in the eggs. 

 

Gradually add the flour mixture.  

 

Stir in the oats (and raisins).  The batter will be stiff and difficult to stir.  

 

Drop by teaspoon onto un-greased baking sheet (2 inches apart) 

 

Bake for 10 – 12 minutes at 350.
